AbstractThe three brinjal varieties were selected. They were wrapped in polythene bags and stored at room temperature, 4oC, 10oC, and at -20oC for zero, five and ten days. The biochemical parameters (Total carbohydrates, proteins, antioxidants, polyphenols, ß-carotene, moisture content, polyphenol oxidase) were analyzed by adopting various analytical methods for three varieties at different temperature conditions. The ß- carotene content was determined by spectrophotometer and the values obtained were used to estimate retinol equivalent (vitamin A content).
